Pancakes with Strawberries
Ingredients
Batter
1 cup SR flour
1/2 cup milk
3 tablespoons melted butter
1 egg
3 tablespoons sugar
Topping
Punnet of farm fresh strawberries
1 cup cream, whipped
1 cup vanilla ice-cream
1/2 cup maple syrup
What to do...
Place all batter ingredients (except milk) in a bowl and beat until creamy. Add milk slowly to form the consistency of thick cream.
Heat electric frying pan to medium heat (6 or 7).
Spread a small amount of melted butter over pan.
Use a large serving spoon to spoon mixture onto hot pan in small rounds.
Cook until batter starts to bubble then flip pancakes and brown on the other side.
Remove from heat and place on plate then top with lashings of cream, ice-cream and strawberries.
Drizzle with maple syrup and enjoy.
Lunch Time Omelette
Ingredients
5 eggs
2 tab milk
olive oil
200g ham diced
3 large mushrooms diced finely
1 tomato diced finely
1/3 cup grated tasty cheese
1 tab parsley finely diced
cracked pepper
What to do...
Heat small frying pan to a medium heat.
Lightly beat eggs and milk together.
Pour 1/3 of mixture into pan and allow to spread evenly.
While the egg is cooking sprinkle a small amount of each of the filling ingredients over
one half of the omelette starting with the cheese.
Fold the empty half of the omelette over the filling to make a semi-circular shape.
Cook for a further 3-5 minutes.
Slide onto a plate and serve.
Italian Fried Pizza Bread
Ingredients
3 1/2 cups plain flour
1 tablespoon olive oil
270 mL water
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons warm water
1 sachet dry yeast
What to do...
Mix yeast and warm water. Set aside in a warm place for 10 minutes.
Place flour on a bench/ marble slab.
Make a well in the middle and place moist ingredients including yeast, in the centre.
Slowly draw flour in from the edges to form a dough.
Alternatively, put everything in a food processor and pulse to form a well-kneaded dough.
Put dough in a lightly oiled bowl and set aside for 1 1/2 hrs in a warm place to rise.
Heat olive oil in a large electric frying pan to a high heat. For adults only!
Punch back dough and divide in half.
With a rolling pin, on a floured surface, roll dough into two rounds.
Shallow fry each round till brown on each side and bread has risen. Approximately 5 minutes on each side.
Salt well and serve alone or with soup.
We love it dipped in fried eggs or spread with pesto.
Minestrone
Ingredients
Olive oil
1 celery stalk diced
1 carrot diced
1 onion diced
1 potato peeled and diced
1 bunch of endives or sugarloaf cabbage, diced
2 cloves garlic crushed
400mL tomato puree
300g green beans diced
1 tin of beans (cannellini)
basil
2L chicken stock
1 cup cooked rissoni pasta (soup shapes) or rice (opt.)
Parmesan cheese (opt.)
What to do...
Fry onion till tender. Add carrot, celery, potato and garlic.
Fry lightly.
Add tomato puree water and endives/cabbage.
Add enough chicken stock or water to cover.
Bring to boil. Reduce heat and simmer for 30 minutes.
Remove from heat and puree soup.
Stir through tinned beans and green beans.
Bring to boil.
Simmer till heated through.
Salt to taste.
Add pasta shapes / rice if desired and drizzle with a little olive oil and a sprinkle of parmesan to serve.
